I made it to Week 3!!! So wicked proud of myself. This next week is definitely going to be challenging, since there are no grains or beans allowed. I stocked up on berries and veggies for this week. This is my menu for the week:
Breakfast – 3 cups worth of blackberries, raspberries, blueberries, kiwi
Lunch – Romaine lettuce, red peppers, cucumbers and a homemade vinaigrette
Snack – 1/2 packet of Vegan Shakeology
Dinner – Roasted sweet potato with asparagus or brussels sprouts.
I am noticing that for the first time in the Reset, I’ve been a bit hungry in the morning on my drive to work. This hasn’t been my favorite week food wise, but the fact that I’m feeling better makes sticking through it totally worth it.
